Carbohydrates, proteins and lipids and their food tests, and how enzymes work and the factors affecting them.
Biological molecules and food tests
- Carbohydrates — made of simple sugars (e.g. glucose); stored as starch.
- Proteins — made of amino acids; for growth/repair and enzymes.
- Lipids (fats/oils) — made of glycerol and fatty acids; energy store and insulation.
| Test | Reagent | Positive result | |---|---|---| | Starch | iodine | blue-black | | Reducing sugar | Benedict's + heat | brick-red | | Protein | biuret | purple | | Lipid | ethanol emulsion | cloudy white |
